Haystack is one of my favorite salads. This version of that recipe has the right amount of lean protein and non-starchy vegetables.
Lean and green meals at a glance:
5-7 oz lean protein
3 servings of non-starchy vegetables
≤ 2 servings of healthy fats (depending on your choice of lean protein)
≤ 3 condiments
Yields 1 serving
Takes 10 minutes to make
Ingredients:
5.1 oz iceberg lettuce - 2 greens
3.17 oz tomatoes (2.63 oz if using cherry tomatoes) - 1 green
2 oz part-skim shredded mozzarella cheese (or other skim cheese of choice) - half serving lean protein
1 bag Quest chips (any flavor)- half serving lean protein
2 T sour cream - 1 condiment
2 T salsa - 2 condiments
1 T water
Instructions:
Cut lettuce into shreds and chop tomatoes. Mix lettuce, tomatoes, cheese, and crushed quest chips together in a bowl. In a small bowl, mix sour cream, salsa, and water together. This will serve as the salad's dressing. Pour over salad and enjoy.
